This soft cheese with a bloomy rind is made with pasteurized milk. Its rind is tender and velvety, and the interior is creamy and runny. This Camembert, made using traditional methods, produces a slightly floral, milky aroma and a buttery taste.
It is certainly the oldest Camembert in North America; it is named in honour of its creator, Madame Clément, a cheese maker from McMasterville in the Montérégie. She kept the recipe alive by making the Camembert from Normandie in Quebec, as of 1924. Damafro was founded in 1984 by Claude Bonnet, originally from Brie, France, and his two sons Michel and Philippe. That story began with the purchase of the Clément business. The cheese shop was later moved to Saint-Damase, where it has experienced strong and stable growth.
